About the Recipe
These pancakes are the ultimate mix of delicious and nutritious, every bite is loaded with juicy blueberries, creamy yogurt, and the delightful crunch of chia seeds. Packed with antioxidants to keep your body happy, fiber for a healthy gut, and omega-3s for brainpower, these pancakes are a feel-good way to start the day.
Ingredients
1 ½ cups of GF flour
2 medium eggs
¾ cup of milk
1 tsp chia seeds
1 tsp baking powder
5 tbsp Greek yoghurt
2 tsp beetroot powder (not essential)
100g blueberries

1. Chop your blueberries into 1/4. Add to a bowl with your chia seeds and yogurt and allow them to bloom for 10 minutes.
2. Add the remaining ingredients to a bowl and which into a batter.
3. Gently fold your yogurt chia mix into the batter.
4. Heat your pan on medium heat and add a small amount of oil.
5. When hot, add your batter and cook on one side until brown (approximately three minutes)
6. Flip your pancakes and cook for a further three minutes.
7. Enjoy with additional berries, honey, more yogurt, maple syrup, or simply lemon and coconut sugar
